Cracker Candy
Here is my recipe for an easy, easy treat that is great for gifts or just eating yourself! It is addictive...salty, sweet and simple.
Preheat oven to 350 degrees
1 sleeve or so of saltine crackers
2 sticks of butter
1 cup of sugar
1 package of chocolate chips (I've used dark and white chocolate)
Crushed nuts...walnuts, pecans, or sliced almonds
Line cookie sheet with foil. Spray with non-stick spray.
Place saltine crackers on baking sheet, salt side up, making sure there are no spaces.
Cook and stir butter and sugar till frothy, basically to a roiling boil. Remove from heat.
Pour over crackers as evenly as possible.
Bake at 350 for about 8 minutes or until it is nice and bubbly.
Take out of oven and sprinkle with a package of chocolate chips.
Wait about a minute for chips to melt, then spread chocolate with a spoon or spatula.
Sprinkle your nuts of choice while still warm.
Place pan in fridge for about 30 minutes until set.
Just lift up the edges and break into pieces.
The white chocolate looks beautiful with crushed candy canes, if you like the taste.
Below is a picture of what it looks like, from someone else's recipe. I've attached that link as well, the ingredients are a tad different from mine, using less butter and brown sugar instead. Enjoy!
**I tried the recipe below last night. It's good but it is truly hard, chewy toffee. Mine is much softer. Must be the brown sugar I guess. **

I don't know why but this really made me laugh!!
Piper, you added an extra stick of butter from the original recipe so that would make it much softer. The type of sugar wouldn't make a diff but the length of cook time and temp reached while boiling and amount of butter would.
Gotta try it but I suppose I should buy new crackers, mine are probably stale...Yuk!
